Fully Loaded Roasted Potato Wedges
These are the BEST loaded potatoes on the internet, and they are perfect for game days (ahem…Go Vols!). Make these for a house party, or enjoy them on a special date night for two, either way, they’re going to be a major hit with your friends, your kids, and anyone else you share these with!
Who doesn't love a loaded potato? I grew up in the land of Rick's BBQ, which is a fairly substantial restaurant chain in Southern Middle Tennessee and Northern Alabama. When it comes to fast food barbecue, you can't get any better than Rick's, in my opinion. I have a super tender spot when it comes to their loaded potatoes. They're massive and fully loaded with your meat of choice, a ton of butter and sour cream, bacon, chives and ALL the cheese.
My loaded roasted potato wedges are fully inspired by my love of all things Rick's BBQ, and I am sooo excited to share them with you! It will only take one bite for you to fully understand why they're a favorite.

I’d definitely put this recipe in the category of one of my top 5 I’ve made. They’re crisped to perfection in the oven, and even without all the extra toppings, they’re some of the best roasted potatoes I’ve ever made. The skins of the potatoes crisp sooo nicely, and they're coated with garlic, smoked paprika, kosher salt, ranch powder and fresh thyme leaves. YUM!!
Once they're pulled out of the oven, toss them in the sour cream & ranch dressing base and then load them up with bacon pieces, shredded cheddar cheese, chives and parsley. Dive in immediately because these are best enjoyed while hot & fresh out of the oven; although, I think you would have done so anyways. They're so insanely good!
