I love one-dish meals, and we've been eating a lot of them since the beginning of my pregnancy. They're simple and effective with much less mess, and they often have waayy more flavor than other recipes. What's not to love about that?!
Well, about a month ago, I was in a very lazy mood and instead of mincing individual garlic cloves for a recipe I was working on, I barely sliced the top layer off the entire head of garlic, wrapped it in aluminum foil with a little olive oil, and I tossed the whole thing in my oven to roast for a few minutes. The end result forever changed the way I cook with garlic...no joke, friends! What I pulled out of the oven resembled garlic in flavor and butter in texture--sooo stinking good! Soo... when I was preparing for this already-easy, one-pan Lemon, Garlic & Herb Roasted Chicken, I knew I wanted to leave the garlic head whole so I could smear the buttery cloves of goodness on each crispy piece of chicken once it was finished cooking, and we all LOVED it!!
