Cinnamon Coffee Cake Muffins

These muffins are full of cinnamon and loaded with the yummiest crumble streusel topping. An easy, portable version of a favorite breakfast staple.



Not even kidding--the most difficult thing about this recipe is limiting yourself to just one muffin when they're finished. They're soo good!



The details:


Breakfast is my absolute favorite meal of the day, and I LOVE it when I get the opportunity to make brunch boards for my family, friends and coworkers. Recently, I was asked to make a brunch board for a group of people who do a lot of business with our office, and I thought these coffee cake muffins would be perfect to make for the board.



The process:


Wet ingredients: Whisk together milk, oil & eggs.



Dry Ingredients: Whisk together flour, brown sugar, baking powder, cinnamon & baking soda.




Streusel Topping: Mix sugar, cinnamon, salt, butter & flour.



Mix, Bake, Ice & Serve: Combine wet + dry ingredients. Pour into muffin wells. Top with streusel. Bake. Ice with powdered sugar and milk (if desired), and serve.




Each step is incredibly simple, so if you're a novice baker who desires to try new things, this recipe is the one for you!
