Pizza Pinwheels
Let’s start with the pizza pinwheels. First, kids LOVE these. This recipe calls for crescent rolls, pizza sauce, pepperoni and mozzarella cheese. That’s it! But, I do have some advice from my own trial and error while making these for the first time. I’ll share the ingredients and then give you some tips to hopefully help the process go much smoother for you than it did for me.
Ingredients:
1 can of refrigerated crescent rolls
1/2 cup pizza sauce
24 pepperonis, chopped in food processor
1 cup mozzarella cheese, chopped
Directions:
Preheat oven to 350 degrees. Spray a muffin pan with nonstick spray.
Lightly flour a clean counter surface, and split the crescent dough in half.
Here’s the MUST DO. After splitting the dough, use your fingers to pinch the perforations together to seal the dough. This will cut down, significantly, on the mess when rolling and cutting the pizza pinwheels.
Spread pizza sauce evenly on the dough.
Use a knife to chop the mozzarella cheese into smaller pieces, which will also help with the overall mess; spread evenly on both halves of crescent dough.
Then, using a knife or a food processor, chop the pepperonis into smaller pieces and sprinkle evenly on top of cheese.
Fold over about an inch of the dough; then roll tightly and cover with plastic wrap, and place in freezer for 10-15 minutes. This will help the dough get nice and firm to allow for clean, easy cuts.
Then, using a serrated knife, slice the pizza rolls into 1 to 1 1/2 inch slices and place in prepared muffin pan; bake 10-12 minutes until done.
Let cool for 5 minutes before removing from pan.
Spinach and Bacon Pinwheels
These are so good! They’re adult friendly, and I only say that because our kids turned their noses up when they saw all the spinach (but they’d like them if they would try them—just saying). I like to refer to them as spinach crack rolls because they’re so addictive. I could easily eat an entire pan of these without thinking twice. I think it’s the ranch powder that makes these soo good, but let’s face it, everything is better with ranch!
Ingredients:
2 10 oz packages frozen, chopped spinach
1 8 oz package cream cheese, room temperature
1/2 cup mayonnaise
1/2 cup sour cream
1 package dry ranch mix
1 3 oz package real bacon bits
3 green onions, chopped
1 8-count package 10-inch spinach tortillas
Directions:
Thaw spinach and use paper towels to remove all excess liquid. Let sit on paper towels while mixing other ingredients.
Mix cream cheese, mayonnaise and sour cream until well-combined.
Add dry ranch powder and bacon bits. Mix well. Add green onions and spinach last and mix until well-combined.
Spoon mixture evenly onto spinach wraps, leaving about half an inch of tortilla “dry” around the edges.
Roll tortillas tightly. Cover with plastic wrap and refrigerate overnight to allow for much cleaner slices.
Using a serrated knife, cut ends off tortillas and slice the rolls into 1 1/2 inch slices and enjoy!
Turkey, Bacon & Ranch Pinwheels
These are the kids’ favorites, and I can see why! It’s basically a club sandwich in a pinwheel, without the tomato. They’re super yummy.
Ingredients:
1 8 oz package cream cheese, room temperature
1 tablespoon dry ranch mix
1 cup cheddar cheese, chopped
2 tablespoons of milk
3/4 cup real bacon bits
1/2 pound thin-sliced deli turkey
6 10-inch whole wheat tortillas
Directions:
Mix first 5 ingredients together until well-combined.
Spoon mixture evenly onto tortillas leaving about half an inch of tortilla “dry” around the edges.
Lay 3-4 slices of turkey on top of mixture.
Roll tortillas tightly. Cover with plastic wrap and refrigerate overnight to allow for much cleaner slices.
Using a serrated knife, cut ends off tortillas and slice the rolls into 1 1/2 inch slices and enjoy!
